Layers of vanilla cream, ground biscuits, banana, whipping cream, and homemade chocolate ganache assembled into pudding parfaits. Creamy, light and delicious - Chocolate Banana Pudding Cups
Prepare the pudding just like it says on the pudding on the pudding bag, but note that you will need to use around 500g milk, so depending on the bag, you may have to use less or more.
Here’s the way I like to prepare the pudding:
Add the milk in a pot, but leave around 5-7 tbsp of it in a separate bowl, and the rest of it put over medium heat.
In the bowl with the milk, the sugar and add the pudding powder and the sugar and mix it well. Once the milk gets hot, and it’s almost before boiling, start adding the pudding mixture into the milk slowly while continuously whisking.
Continue whisking until the pudding starts to thicken ( around 30seconds to 1minute).
When it’s thickened, take it off the heat, cover with plastic wrap while it’s still hot, and leave it to cool down for a couple of hours.
When the pudding get's on room temperature, add the butter in and mix with mixer until it's fully incorporated.
Add the whipping cream and the chocolate in a medium bowl and microwave them for around 20 seconds, then take it out and mix with a spoon to get it everything incorporated.
Add the ground biscuits in a ziplock bag and crumb them using a rolling pin, also, in a separate bowl whip some whipping cream to add on top of the parfaits.
Also, cut the banana on coins and squeeze some lemon juice on top, so the banana doesn't brown.
First, add the pudding, then a layer of banana, and then a layer of ground biscuits.
Top the biscuits with the chocolate ganache (adding an equal amount in each cup. Continue with another layer of vanilla pudding. Again add a layer of banana and then a layer of ground biscuits. And finally, on top, add the whipping cream and the leftovers of the ground biscuits for decoration.
