Easy Homemade Potato Gnocchi – A delicious pasta dish to serve for any occasion.

Super delicate Italian pasta dish prepared in around 30 minutes? – It’s called homemade potato gnocchi. I’ve made them several times before and I am absolutely in love! They are light and pillowy and soo fun to make from scratch!

What is potato gnocchi?

Gnocchi is light and delicious Italian pasta dish made from potatoes, eggs, and flour. They can be prepared and served in different ways and shapes. But they always have that pillowy texture on the inside, and crunchy on the outside. 

I’ve seen a lot of questions on how gnocchi should taste like. So here’s the answer – their base is potato, so the main flavor you are going to taste are potatoes + the ricotta cheese that’s in this recipe. But they are a very good base for sauces. So you shouldn’t be surprised if they don’t have any wow flavor, because they are similar to any other raw pasta.

Why are this homemade potato gnocchi so good?

Gnocchi can be found in almost every grocery store but they are not even close to the taste that the homemade ones have. 

  • They are lighter and less in calories that the store-bought gnocchi. 
  • Homemade gnocchi are more flavourful. 
  • When prepared at home they can be seasoned and served with flavors that you like the most 

How to roll and shape the gnocchi?

Once you have a good soft pillowy dough it is time to shape the gnocchi. Remember to not over-knead the dough so the gnocchi can double in size when they are blanching. Turning the dough into rope is the easiest way to roll the gnocchi. Then you would have to shape them and there is a lot of ways doing this. 
I like to cut them into half-inch pieces and gently press with my index finger in the middle.  For shaping with a fork, you will have to roll each piece down the tines of a fork to create grooves.

How to boil the gnocchi?

Boiling the gnocchi is pretty easy and straight forward. Put water some olive oil and salt to boil. Then put the gnocchi inside the boiling water and wait for them to float up and double in size (that should take around 2-3 minutes)

for the dough:
 1 cup potatoes
 ¼ cup cream cheese
 ¾ cup flour
 1 egg
 ½ tsp salt
for boiling:
 16 oz water
 2 tbsp olive oil
 ½ tsp salt
for frying:
 1 tbsp butter
 a pinch of salt and pepper

for the dough:

Boil large potatoes and leave them to cool down. Peel them and mash them with potato masher or fork. Make sure that you have a smooth potato mixture.

To the potatoes add cream cheese/sour cream, flour, and whole egg in the middle of the mixture.

Mix everything together with a wooden spoon until the dough starts to form. Then transfer the dough on a floured surface and gently knead for less than a minute.

Cut the dough into 6 equal pieces and make balls. Roll each ball into a rope with the palms of both hands.

Cut in equal 1cm gnocchi with a knife and on each piece gently press in the middle of each gnocchi with your index finger.

for boiling:

Add water and into a medium pot and wait for the water to boil.

Add the gnocchi in and wait for them to start floating on the top. You will know they are ready once they are almost doubled in size and they are floating on the top.

for frying:

Melt the butter in a pan. Take the gnocchi out of the water and put them straight in the pan. Leave them to become crispy and golden on both sides.

Season with salt, pepper

Notes:

  • This pasta dish is not finished here, you can add any pasta sauce that you like and complete the dish with that! They go very well with mushrooms, parmesan, grated lemon zest, tomato sauce, white sauce, etc., etc.
  • If the dough sticks to your hands feel free to add more flour.
